While preparing this article, I had the pleasure of speaking with Muriel Norka, former owner of Chocolaterie Belge Muriel. Passionate about cooking and gourmet pleasures, Muriel brought her unique expertise to the chocolate factory over a 20-year period. Today, although she has sold the business, she remains active within L'Échappée Belle, perpetuating its heritage while adding a touch of renewal.
Can you tell us about the history of the chocolate boutique and what inspired you to open it in the first place?
The chocolate boutique was founded 37 years ago by Mr. and Mrs. Henquin, who ran it for 17 years before passing the torch. I myself worked there for 20 years. What really pushed me to open the chocolate boutique was my passion for food and cooking. I love cooking, whether it's savoury dishes or sweet treats. It was this passion that made me want to share my creations with others.
What were your specialties, or the best creations that customers liked best?
Every chocolate we offered was a specialty in itself! Our recipes were unique to the chocolate boutique, and we made a point of guaranteeing impeccable quality. Customers loved our chocolates, and over the years we noticed a growing craze for dark chocolates, which became a favorite with many.
Is there a particular anecdote or moment that stands out in your mind from your years as owner?
Every day was a new adventure! I remember the excitement of meeting new customers and answering their questions. It was like a daily festival of discovery. Every day had its own highlight.
Have you had a chance to sample the new owners' creations? What do you think of them?
Yes, I've had the chance to taste their creations, and I must say they're very good! So far, we've even developed two new recipes together. They have some really good ideas that bring a breath of fresh air to the chocolate shop.
